  • 4 grams No. 060 Sencha Kyoto
  • 45 ml Gin
  • 10 ml sugar syrup
  • 20 ml lemon juice
  • a few drops of olive oil
  • 1 basil leave
  • 1 Yuzu peel

Wash the Sencha and the yuzu peel by adding it to hot water and letting it sit for 10 seconds.

Sieve and weigh

Sieve it, and keep the tea leaves with the yuzu. Add the gin and allow this to sit for 20 minutes. The taste of the Sencha will now soak into the gin. Meanwhile, you can weigh the other ingredients.


After 20 minutes, sieve the tealeaves and yuzu, but keep the gin. Add this, together with the lemon juice, sugared water and ice cubes all in a shaker.


Shake the ingredients until they feel cold enough, and sieve them out in a coupe glass.


Garnish the cocktail by adding a few drops of olive oil (a tea spoon comes in handy), and with a basil leaf.
